Turning into buns isn't exactly the most logical thing to do. But it's genius, isn't it?

INGREDIENTS
4 tbsp. butter
8 slices white bread
8 slices cheddar
3/4 lb. ground beef
kosher salt
Freshly ground black pepper
Ketchup, for serving
DIRECTIONS
1. Assemble sandwiches: Spread butter onto one side of each slice of bread. Place two slices of cheddar onto the butter-free side of four slices then top with remaining bread, butter side-up.
2. Heat a large nonstick skillet over medium heat. Add sandwiches in a single later, working in batches if necessary. Cook, flipping once, until the bread is very lightly golden on each side and the cheese is just starting melt. Remove from pan and wipe skillet clean.
3. Season burgers with salt and pepper, and raise heat to medium-high. Add burgers and cook until seared on both sides and cooked to your liking, about 4 minutes. Remove from skillet.
4. To assemble, place a grilled cheese on a plate then top with a burger and another grilled cheese. Cut in half and serve with ketchup.
